Red Velvet Cake
This show-stopping treat can be enjoyed by everyone!
To create this you’ll need;
For the cake;
- 175g GF self raising flour
- 1 tsp xanthan gum
- 3 tbsp cocoa powder
- 85g butter
- 150g caster sugar
- 2 eggs
- 2 tbsp red food colouring
- 2 tsp vanilla extract
- 200ml milk
For the cream cheese icing;
- 115g cream cheese
- 60g butter
- 1/2 tsp vanilla extract
- 350g icing sugar
Preheat the oven. Mix the flour, xanthan and cocoa powder in a bowl.
In another bowl beat the butter and sugar together. Add the eggs and whisk. Add in half the flour mixture, colouring, vanilla extract and half the milk. Whisk together and then add the remaining flour mixture and milk.
Spread the mixture between 2 cake tins and bake for 30 minutes until cooked. Cool on a wire rack.
For the icing, whisk the cream cheese, butter and vanilla extract in a bowl. Gradually add in the icing sugar and mix together.
Slice a tin layer of crumbs off the top of one of the cakes. Assemble the cake, adding half of the icing sugar on top of one cake, top with the other and finish the top with the rest of the icing. Sprinkle the crumbs on top of the cake.
