Lemon Scones

Scones that are filled with citrus flavour for a Spring themed afternoon tea!

Here’s what you’ll need;

  • 115g GF plain flour
  • 115g rice flour
  • 60g caster sugar
  • 4 tsp baking powder
  • 1 1/2 tsp xanthan gum
  • pinch of salt
  • 75g butter
  • 150ml milk
  • Zest of 2 lemons
  • Juice of 1 lemon

First, preheat the oven to 200. In a large bowl, mix together the flours, sugar, baking powder, xanthan gum and salt. Add in the butter and rub together until it looks like breadcrumbs.

Stir in the milk, lemon juice and lemon zest. Mix together to make a soft dough. Either use a cookie cutter or free hand into scones shapes and transfer to a baking tray covered with greaseproof paper. Make sure to spread each one out as they will spread slightly in the oven.

Brush each one with milk on the top and sprinkle with a little sugar.

Bake in the oven for 18 minutes or until golden on top.

Allow to cool and then serve!
