Pretty Pink Cupcakes

Just a touch of pink – Pink cupcakes, pink buttercream and pink sweeties!

Here’s what you’ll need to get started;

For the cupcakes;

  • 115g butter
  • 115g caster sugar
  • 2 eggs
  • 115g GF self raising flour
  • 3 tbsp milk
  • 1 tsp vanilla extract
  • A couple of drops of pink food colouring, or beetroot juice

For the buttercream;

  • 150g butter
  • 1 tsp vanilla extract
  • 280g icing sugar
  • 1-2 tbsp milk
  • Drop of pink food colouring or beetroot juice

Preheat the oven to 180. In a bowl, mix together the butter and sugar until pale and fluffy. Add in one egg at a time, whisky until additions. Add in a couple of tablespoons of the flour with the last egg. Add in the remaining flour, milk, vanilla extract and food colouring and whisk.

Divide the mixture between cupcake cases and bake for 20 minutes. Cool in the tin for 5 minutes and then transfer to a wire rack.

Once cool, mix together the buttercream ingredients until light and fluffy. Spread evenly over each cupcake and top each one with a sweetie of your choice!
