Courgette and Chilli Fritters.
If you’re looking to try something different as a way to enjoy some vegetables. This recipe is perfect for you.
Here’s what you’ll need;
- 600g grated courgette
- salt and pepper to season
- 150g GF plain flour
- 1 tbsp oil
- 2 eggs
- 150ml milk
- 1 tsp chilli flakes
Grate the courgette and pop them in a colander. Sprinkle with salt and leave to drain in the sink for 30 minutes.
In the meantime, place the flour, oil, eggs and milk in a bowl. Season with salt and pepper and mix well. Leave for 30 minutes.
Squeeze all the water out of the courgettes. Add the grated courgettes into the batter mixture and add in the chilli flakes.
Heat some oil in a frying pan and add a dollop of the mixture at a time, flip halfway through cooking. Once they are golden on both sides, serve while warm.
