Olive Bread

If you’re looking for something to enjoy with your pasta dish, or simply something to enjoy on it’s own. Look no further!

Here’s what you’ll need;

  • 450g GF white bread flour blend
  • 2 tsp xanthan gum
  • 2 tsp dried yeast
  • 2 tsp caster sugar
  • 1 tsp salt
  • 6 tbsp olive oil
  • 300ml lukewarm water
  • 2 tsp mixed herbs
  • Olives, roughly chopped (as many or as little for your preference)

Sift the flour into a large bowl and add in the xanthan gum, yeast, sugar and salt. Add in the water and 3 tbsp of the oil, then mix together to form a soft dough.

Knead for around 10 minutes and then return to the bowl. Cover with oiled cling film and leave in a warm place for 1 hour.

Lightly grease the tin and pour the dough in. Push around so the dough reaches all the corners. Cover with oiled cling film again and leave in a warm place for another 30 minutes.

Preheat the oven. Scatter the herbs and olives over the bread and bake in the oven for 30 minutes.

Serve while warm and enjoy!
