Carrot and Paprika Fritters.
Similar to the courgette and chilli fritters I have created before. These fritters have more of an Autumn feel about it!
Here’s what you’ll need;
- 600g grated carrot
- salt and pepper to season
- 150g GF plain flour
- 1 tbsp oil
- 2 eggs
- 150ml milk
- 1 tsp paprika
Grate the carrot and pop them in a colander. Sprinkle with salt and leave to drain in the sink for 30 minutes.
In the meantime, place the flour, oil, eggs and milk in a bowl. Season with salt and pepper and mix well. Leave for 30 minutes.
Squeeze all the water out of the carrots. Add the grated carrots into the batter mixture and add in the paprika.
Heat some oil in a frying pan and add a dollop of the mixture at a time, flip halfway through cooking. Once they are golden on both sides, serve while warm.
