Berry Muffins
I love a fruit muffin! So for a tasty treat I opted for a muffin filled with blueberries, blackberries and currants. Super easy to make and oh so tasty.
Here’s what you need;
- 150g GF plain flour
- 50g ground almonds
- 150g sugar
- 125ml sunflower oil
- 3 eggs
- 2 tsp vanilla extract
- Pinch of salt
- 225g mixed berries
- 1 tsp cornflour
- 1 tbsp baking powder
Preheat the oven.
Place the flour, ground almonds, sugar, oil, eggs and vanilla extract in a bowl and mix until combined. Leave the mixture to stand for 15 minutes.
In the meantime, place the berries in a bowl and coat with the cornflour.
Add the baking powder to the mixture and stir in. Add the berries and gently combine, it’s ok if they aren’t fully combined.
Place your muffin cases in a muffin tin and add spoonfuls of mixture to each case in turn, making these roughly equal.
Bake in the oven for 30 minutes until golden, leave to cool on a wire rack before serving.
