Lemon biscuits
Lemony and oh so fresh! They biscuits are just so soft and tasty!
When life gives you lemons, make sure to make these lemon biscuits!
Here’s what you’ll need;
- 150g GF plain flour
- 70g sugar
- 100g butter
- Grated rind of 2 lemons
- 1 egg
- 1 tsp baking powder
- 1/2 tsp xanthan gum
- 1/4 tsp cinnamon
Add all the ingredients together in a bowl and stir until well combined. Form the mixture into a ball of dough, wrap in clingfilm and chill for 30 minutes.
Preheat the oven and grease the baking tin.
Roll the dough out onto a floured surface and use a biscuit cutter to shape into rounds. Spread out on the baking sheet and pop in the oven.
Bake for 20 minutes until golden. Transfer to a wire rack and leave to cool. Serve once cooled.
