Lemon and Poppyseed Blondies
Why not combine the classic lemon and poppyseed flavour, with a chocolate sweet treat?! What other reasons do you need to get this a go!
Here’s what you’ll need;
- 300g white chocolate
- 175g butter
- 200g sugar
- 5 eggs
- 175g GF plain flour
- Zest of 1 lemon
- 30g poppyseeds (extra for sprinkling on top)
- 4 tbsp lemon curd
Preheat the oven. Melt the butter and chocolate together over a pan of boiling water.
Take off the heat and combine with the sugar, then allow to cool slightly.
Add the eggs one at a time, whisking in between each addition. Sift in the flour and add the seeds and lemon zest. Combine together and then leave to stand for 5 minutes.
Spoon the mixture into a greased brownie tin. Make sure the mixture is pushed to all the edges. Add dollops of the lemon curd into the brownie mix and spread out with a skewer or knife. Sprinkle a couple of pinches of poppyseeds over the brownie and place in the oven.
Bake for 20 minutes until the mixture is set. Allow to cool in the tin and then remove and cut into pieces.
