Rocky Road Brownie

Can a chocolate brownie get any better?! Well it can with this brownie, topped with nuts and marshmallows.

Here’s what you’ll need;

  • 300g dark chocolate
  • 175g butter
  • 300g sugar
  • 5 eggs
  • 175g GF plain flour
  • 30g cocoa powder
  • 60g walnuts
  • 30g hazelnuts
  • 30g vegetarian marshmallows

Preheat the oven.

Melt the dark chocolate and butter in a bowl over a saucepan of boiling water, until melted together. Leave to cool slightly and then combine with the sugar.

Add the eggs and whisk in between additions. Sift the flour and cocoa powder into the bowl with half the walnuts, mix until well combined.

Grease a brownie tin and pour the mixture into the tin, making sure that the batter reaches all the edges. Sprinkle the rest of the walnuts and hazelnuts over the top.

Bake for 15 minutes, remove from the oven and sprinkle the marshmallows over the top. Return to the oven for another 5 minutes, until the marshmallows are slightly golden on top. Allow the brownie to cool in the tin before cutting into 20 pieces.

Serve and enjoy!
