Chocolate Raisin Scones
An Autumnal twist on the classic scone with jam and cream! Packed with flavour that still goes perfectly well with a cuppa!
Here’s what you’ll need to get started;
- 225g GF plain flour
- 60g sugar
- 4 tsp baking powder
- 1 1/2 tsp xanthan gum
- pinch of salt
- 75g butter
- 150ml milk
- 85g raisins
- 2 tbsp cocoa powder
- 1/2 tsp mixed spice
- 1 egg, beaten
Preheat the oven.
Sift together the flour, sugar, baking powder, xanthan gum and salt in a bowl. Add in the butter and rub together with your fingertips until breadcrumbs form.
Stir in the milk, then add in the raisins, mixed spice and cocoa powder. Mix gently until a soft dough forms. Knead briefly and then roll out onto a floured surface.
Use a cookie cutter to shape 8 round scones. Beat the egg and brush over the top of each scone.
Place on a greased baking tin and bake for 16-18 minutes until the tops are golden.
Serve warm or cold. Enjoy!
