Fruit and Nut Waffles

Waffles with a nutty twist! This recipe is enough for 2 people to enjoy. Don’t have a waffle maker? This can easily be adapted to make pancakes by cooking in a pan rather than waffle maker.

Here’s what you’ll need;

For the waffles;

  • 1 tbsp peanut butter
  • 2 eggs, beaten
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 50ml milk
  • 80g GF plain flour
  • 1 tsp baking powder
  • Oil spray (for the waffle maker)

For the toppings;

  • 4 large strawberries, halved
  • Roughly 15 blueberries
  • Roughly 15 pecans
  • Handful of flaked almonds
  • Drizzle of honey

In a large bowl mix together the wet ingredients, then add in the dry ingredients and mix until combined. Make sure to not over mix.

Heat the waffle maker as per your instructions. When ready, spray with oil and pour half of the mixture evenly into the waffle maker. Cook for 5 minutes on a medium/high setting. However, if you’re used to the settings on your waffle maker cook for as long as you know works for your maker.

When baked, transfer to a plate. Spray the waffle maker with more oil and pour the remaining mixture in and cook for 5 minutes. Once done, transfer to a plate.

Top each serving with the topping ingredients and finish with a drizzle of honey.
