Chocolate and Coconut Donuts
A flavour match made in heaven! I topped all my donuts with coconut, but mix and matched between chocolate glaze and a classic glaze.
Here’s what you’ll need;
For the donuts;
- 200g GF plain flour
- 70g sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 70g cocoa powder
- pinch of salt
- 100g butter
- 2 eggs
For the glaze;
- 3 tbsp cocoa powder
- 6 tbsp icing sugar
- 6 tbsp desiccated coconut
Preheat the oven.
In a large bowl, add all of the dry ingredients and whisk together. In another bowl, add the wet ingredients together. Then combine all ingredients into one bowl and mix.
Grease the donut baking tin with a little butter and then add the donut mixture to the tin. Bake in the oven for 8 minutes.
Move the donuts to a wire rack to cool. In the meantime, combine the cocoa powder and half the icing sugar in a bowl. Gradually add a teaspoon of water at a time until the right consistency is gained.
In another bowl add the other half of the icing sugar and follow the same process with the water.
Once cooled, dip half of the donuts into the chocolate glaze bowl, and half into the other bowl. Sprinkle each one with coconut.
